No-Bake Matcha Bites

What You’ll Need:

For the base:

For the filling:

  • 1 ½ cups cashews, soaked in boiling water for at least
    20 mins (drain)
  • ½ cup coconut oil, melted
  • ½ cup canned coconut milk (shaken)
  • ½ cup dates, soaked in boiling water for 2 mins (drain)
  • 1-2 tbsp hot water
  • 2-3 tsp matcha

      • Prep Time: 20 minutes
      • Chill Time: 1 hour
      • Yields: Roughly 12 servings

        Preparation:

        1. Line the bottom and the sides of a 8" x 4" baking pan with parchment or wax paper.
        2. In a food processor, chop 1 cup dates with almonds and 2 tbsp melted coconut oil. Press firmly into the bottom of the pan.
        3. Blend the ½ cup of melted coconut oil, ½ cup canned coconut milk, ½ cup soaked dates, 1 ½ cup cashews and matcha in a blender until smooth.
        4. Add 1 tbsp of hot water at a time to help the mixture blend. Pour over the date and almond crumble and garnish with desired toppings. Allow it to set in the freezer for at least
          an hour.
