What you’ll need for the base:
- 1 C. cashews
- ½ C. cranberries
- 1 tbsp coconut oil, melted
What you’ll need for the coconut mixture:
- ½ C. coconut oil, melted
- ¾ C. coconut spread
- ⅓ C. coconut milk powder
- ½ C. full fat coconut milk
- 6 tbsp coconut flour
- 1 tsp vanilla extract
What you’ll need for the cranberry cashew base:
- 1 C. cashews
- ½ C. cranberries
- 1 tbsp coconut oil, melted
What you’ll need for the middle layer:
- ¼ C. coconut spread
- 1 tbsp full fat coconut milk
- 1 tbsp coconut oil, melted
- 2 tbsp Probiotic Cranberry Supreme

- Prep Time: 15 minutes to prepare + 1 hour of freeze time
- Yields: 12 servings
- Store in the freezer for up to a month
To Prepare The Base:

In a food processor, combine cashews, cranberries and 1 tbsp of coconut oil.

Line the bottom and the sides of your baking pan with parchment paper.

Once the mixture is combined well, press it into the bottom of your baking pan.

Place in the freezer while you make the coconut mixture
To Prepare The Coconut Cranberry Layers:

In your food processor, blend together the coconut oil, coconut spread, coconut milk powder, coconut milk, coconut flour and vanilla.

Remove the baking pan from the freezer and using half of the coconut mixture, spread it evenly on top of the base.

Place back in the freezer for about 15 minutes.

In a separate bowl, mix together ¼ C. of coconut spread, 1 tbsp coconut milk, 1 tbsp coconut oil and 2 tbsp of the Probiotic Cranberry Supreme. This is going to be the middle layer of your bar.

Remove the pan once again and evenly spread the probiotic cranberry mixture.

Spread the remainder of your coconut mixture on top of the probiotic cranberry layer

Finally, top your coconut cranberry bars with goji berries or cranberries.

Place the pan back in the freezer one last time for about 45 minutes.

Once your bar is solid, it’s ready to cut and enjoy!

The bar can be eaten straight of the freezer, but is equally delicious after a few minutes of thawing!
