There is no official designation to determine exactly how “cold” the temperature should be in cold-pressing. Cold-processing is a loose definition that can result in varying interpretations and of course varying temperatures. The lower the temperature, the better the olive oil for there is the least amount of degradation of antioxidants and a better representation of fatty acids. Early-Harvested Koroneiki Olives So many factors influence the quality of the olives and thereby the resulting quality of the final olive oil. The olive groves are located in Soulinari, a pristine village in the Peloponnesian region of Greece, just miles away from the famous birthplace of the Koroneiki olive variety.
